「アクリルアミド」という物質は、その特性として分子量71.1、比重1.122~1.127の范囲、そして融点が84.5℃という数値を持っています。見た目は無臭で白色をした結晶で、室温下では安定化した状態を保っています。注目すべき点は、紫外線や熱に反応して重合し、ポリアクリルアミドという物質に変化することです。このアクリルアミドは食品にも存在し、その起源はアミノ酸の一種であるアスパラギンと還元糖の一種ぶどう糖が高温条件下、特に120℃以上という環境で反応して誕生します。この事実は科学者たちによって確認され、その結果が公に報告されています。また、食品安全委員会は加熱過程で生成するアクリルアミドについて調査を実施しており、その評価結果を平成28年4月にまとめました。
