「Aspergillusochraceus」などのカビ類によって生成されるカビ毒が、穀物やその加工品、コーヒー、ココア、ビール、ワインなどの多種多様な食品で、汚染の事例が確認されています。食品安全委員会は、このカビ毒であるオクラトキシンAについて、2014年1月に食品対する健康影響の評価をまとめ、その毒性に関する許容摂取量を算出しました。具体的には、非発がん性の毒性については、体重1kgあたり16ナノグラム、発がん性の毒性については、体重1kg当たり15ナノグラムと設定されています。また、亜急性毒性に関する試験では、腎臓への有害性が確認されています。さらに、長期間の毒性および発がん性についての試験では、雄の腎臓に腫瘍形成が見られました。
