穀物や食品に対するかびの付着や増殖によって生み出される毒素の総称を「かび毒」と指す。これらの毒素は高温に強い特性を持ち、料理の過程でその力を減らすことは困難である。そのため、農産物の収穫から乾燥、そして貯蔵までの全工程で、かびの発生とかび毒の生成を防ぐことが極めて重要とされている。湿度が高く温暖な我が国の気候は、かびが繁殖しやすい環境を提供しているため、天候や農産物取扱いの手段によりかび毒が生成される可能性がある。かび毒にはアフラトキシンやオクラトキシン、パツリン、デオキシニバレノール、フモニシンなどが知られている。
