「量的な視点からのリスク評価とは、食品に含まれる有害物質が、私たちの体内にどの程度取り込まれた時に、どの程度の割合で健康に影響を及ぼすかを数値化する方法である。これは、科学的なデータを基に行われる。例として、残留農薬や食品添加物に対する評価や、動物を用いた毒性試験の結果を参考に、人間が毎日許容できる摂取量や生涯にわたる発がんリスクの推算などが該当する。これにより、一生涯を通して毎日摂取しても健康に影響がないとされる許容一日摂取量（ADI）を設定することが可能となる。」
