「かび毒の一種、B型トリコテセン、は穀類を中心に発生する赤かび病の元凶で、それはGibberellazeae、またはその無性胞子を形成する不完全世代のFusariumgraminearum、F.culmorum等に由来します。特に、小麦、大麦、トウモロコシの汚染例が確認されています。食品安全委員会によれば、このかび毒の食品健康上の影響は平成22年11月に評価書として纏められ、無毒性量（NOAEL）は0.1mg/kg体重/日、そして耐容一日摂取量（TDI）は1μg/kg体重/日に設定されました。さらに、毒性試験において実験動物が使用され、その結果として主におう吐、摂餌量の減少、体重増加抑制、そして免疫系への影響が確認されています。」
