自然界、特に土壌や食品に存在する真菌の一種であるAspergillus flavusやAspergillus parasiticusは、不完全菌類に属するカビの一部であり、彼らはアフラトキシンと呼ばれる毒を産生します。このカビの汚染は、落花生、木の実、穀物などに見られることがあります。食品安全委員会は2009年3月に、アフラトキシンの中でも、B1、B2、G1、G2の4種類を「総アフラトキシン」と呼び、その食品に対する健康影響を評価する文書をまとめています。総アフラトキシンは遺伝毒性を持つ発がん物質として認識され、その発がんリスクについて評価が実施されました。食品からの総アフラトキシンの摂取は、できうる限り最小限に抑えるべきとの結論が出されました。
