「トランス脂肪酸」とは、炭素-炭素二重結合が孤立した構造を持つ不飽和脂肪酸の総称で、共役二重結合を有する脂肪酸はこれに含まれません。これらは、マーガリンやショートニングなどの部分硬化油、精製された植物油、また牛や羊などの反芻性動物の肉や乳製品に存在します。これらの特性として、通称「悪玉コレステロール」（LDLコレステロール）の上昇と、通称「善玉コレステロール」（HDLコレステロール）の減少を引き起こす傾向があります。日本の一般的な食生活だと比較的少ないトランス脂肪酸ですが、多くの摂取が見られる海外では、これが冠動脈疾患の発症率上昇を招く可能性があるという報告も存在します。
